Founder of MUKYO & Sushi m
Former Head Sommelier of NARISAWA
After spending a decade as Head Sommelier at NARISAWA, one of Japan’s most acclaimed restaurants, Yoshinobu Kimura founded Sushi m and later MUKYO in Shinsen, Tokyo. Through food, sake, wine, cocktails, aroma, and temperature, he explores new ways to experience Japanese culture and hospitality.
Executive Chef
After graduating from Tsuji Culinary Institute, Shunsuke Matsuzawa trained at some of the world’s most acclaimed restaurants, including HAJIME, Pierre Gagnaire Tokyo, and Sur Mesure par Thierry Marx in Paris. At MUKYO, he creates French-inspired cuisine that explores harmony with sake through aroma, temperature, and seasonality.
Service
He spent ten years at NARISAWA, working in service alongside Sommelier Kimura. Built on the trust they developed over many years in the same dining room, and an intuitive understanding of each other, he creates a comfortable experience where cuisine, sake, and cocktails come together naturally.
Chef
After graduating from Nagoya College of Culinary Arts, he honed his skills at acclaimed restaurants in Tokyo, including Monna Lisa in Marunouchi and Michelin-starred Simplicité in Daikanyama. With a deep interest and passion for sake, and a desire to express its potential through cuisine, he joined the MUKYO team.
