Former Head Sommelier of NARISAWA
After spending a decade as Head Sommelier at NARISAWA, one of Japan’s most acclaimed restaurants, Yoshinobu Kimura founded Sushi m and later MUKYO in Shinsen, Tokyo. Through food, sake, wine, cocktails, aroma, and temperature, he explores new ways to experience Japanese culture and hospitality.

After graduating from Tsuji Culinary Institute, Shunsuke Matsuzawa trained at some of the world’s most acclaimed restaurants, including HAJIME (3 Michelin Stars), Pierre Gagnaire Tokyo (2 Michelin Stars), and Sur Mesure par Thierry Marx in Paris (2 Michelin Stars). At MUKYO, he creates French-inspired cuisine that explores harmony with sake through aroma, temperature, and seasonality.
